When I was diagnosed with breast cancer in October 2017, as probably many of you did, I started looking for the best diet I could find in order to improve my health. I read many blogs, a couple of books and many people told me hundreds of remedies, therapies, diets, you name it.
With so much information and nothing concrete, I started researching the nutritional value of the food I was eating. No one at the doctor’s office told me what to eat or not to eat; they just told me to eat well and not to eat anything that contained soy. I learned that soy products increase the estrogen in the body and because the cancer I had was estrogen and progesterone positive, then soy would increase the estrogen in my body. I needed to make sure not to increase these two in my diet.
After a few intense days of my own research where I spent hours reading and learning about the good and bad of the ingredients I was normally eating, I came up with my own diet.
No sugar at all, no red meat, no processed food, only fresh food, no dairy, no bad fat, only avocado, nuts and good fats. Only olive oil, avocado oil and coconut oil. Nothing with soy, no rice or carbs that become sugar in the blood. Only organic fruits and vegetables, no sugary fruit, only organic chicken and turkey with no hormones or antibiotics ever, wild salmon and soy free organic eggs and no caffeine.
My diet seemed simple, but it was complicated to prepare many different meals with these requirements, especially feeling weak. So, basically, I ate the same 5 meals over and over. I was ok with it. I wanted to heal and the first month I lost 45 pounds. Of course, I was never intending to lose weight, but because of the healthy food, the chemotherapy and my own nervous state, I ended up super skinny (134 pounds) but feeling well.
Later, after a year and many health books and articles about cancer diets, I learned that I chose good things to eat while on chemotherapy. Still today, 3 years cancer free. I try to eat healthy. Probably not that strict but for sure I buy all my food organic.
